5. Dehydration
After blanching, the surface of the potato strips retains some moisture, necessitating a dehydration step. Methods such as air drying or vibration-based draining can be used to reduce surface moisture.
6. Deep-frying

7. Cooling and Packaging
After pre-frying, the french fries need to be cooled before finally proceeding to the packaging stage.
